Cookie Batter

Chocolate Chips, Crushed Raw Cashews & Thin Pretzels

I enjoy baking and lately I have been trying to make more baked goods from scratch.  While my counter tops were over flowing with bottles and it’s accessories, I kept my kitchenaid mixer in the garage.  Now that I have more counter space I moved all baby items from the kitchen counter and added back my kitchen essentials I truly cannot live without.  First things first is…..COOKIE BATTER!!!!

I’m not always in the mood for chocolate chip cookies, snicker doodles or sugar cookies.  I can’t make a batch for each flavor..well, I can, but for the sake of saving time, I don’t.  So instead, I create a base cookie batter and depending on what I feel like eating for the moment, I just add it in before I bake it.

Here is a breakdown of my cookie batter recipe:

  • 2 sticks of butter softened (never try to speed the softening by using heat)
  • 2 cups of flour
  • 1 cup of light brown sugar
  • 1/2 cup of white granulated sugar
  • 1 teaspoon of baking powder (to give your cookies a chewy consistency)
  • 1 teaspoon of kosher salt
  • 2 large eggs, use only 1 of the 2 yolks
  • 1/2 teaspoon of vanilla extract
  • Use an electric mixer to mix the butter and sugars together.  Start slow and then increase to a medium speed until it is all mixed together and has a creamy consistency.

In a separate bowl measure your 2 cups of flour.  Make sure not to pack in the flour, it should be airy and fluffy as you measure it in the measuring cup. Put your salt and baking powder in the same bowl with the flour.

Add the flour slowly into the butter and sugar mix and continue to mix on a medium speed.

Once the ingredients are mixed together, add in the eggs and vanilla extract.

Preheat your over or toaster oven to 350.  Once it has been pre-heated, put your cookies in for 9 minutes.    You want them to look a bit raw in the middle, but the edges to be browned.  Once they cool off they well harden a bit in the middle and have a nice chewy on the inside crispy on the outside bake.

Once you have the batter complete, go crazy, try new things!

Ideas:

I added crushed raw cashews and thin pretzels and chocolate chips (amazeballs!)

Kettle potato chips and chocolate chips is another crazy idea, but it tastes damn good.

I add sprinkles and oatmeal to the cookies for my kids.

The more you add in, the less cookie batter you use in each cookie.  I like to think of them as healthier that way. 🙂
